2 1/2# medium grind pork
1 1/2# fine grind bacon ends
1# fine grind veal
1T + 2t salt
4t white pepper
2t ground marjoram
1t caraway seeds
1t fresh grated nutmeg
1t ground allspice
1/2t ground ginger
1t garlic powder
1T red pepper flakes
Gonna cook some later. I'll get a money shot.

I had a camera fail last night. boiled them in beer, butter and onions, then grilled them. matched them up with some purple sauerkraut. delicious!
