Scotch Eggs

    I am a big fan of scotch eggs but have never made them before let alone smoking them. So I decided to take the plunge this weekend.

    I was going to buy some sausage from the store but it just felt wrong. I know I make better sausage than what is available commercially so I did the right thing. Here is 15lbs of boston butt cut into strips for the grinder.

    I mixed up my seasonings for hot breakfast sausage.

    15 lbs of hot sage breakfast sausage ready to be used.

    A dozen eggs hardboiled and waiting to go.

  15. Those look amazing! Never heard of them before, but I think might give them a try. Are they battered and fried after the smoke?
