I saw an add in our local news paper.
"WOOD BURNING sausage smoker $70"
So I call the number. The guy says he has one left out of seven and has only been in the paper since yesterday. He says "I make them from hot water tanks" I'm thinking the cool, a 40 or 60 gallon tank. I get there and right off the bat i thought to my self "This has no idea about smoking".
It was a 30 gallon tank upright with 2/3 of it cut out, and the top welded back on. So it stands about 16" tall. I asked the guy how he puts the food in for smoking? He replies you don't, you have to purchase one of the lockers and run duct work into it. Ok, how much? he says $100. So to make a long story short. I explained to him the basics of smoking foods, (since he has never done it). I also expressed my opinion that the opening in the fire pot was only 6"X6" a hair too small. I also explained that since he has welded the top on, there is no way to change or move the grill as well as holding the grill up to clean the ash.
He wants me to go back over to his place next sunday and discuss how to improve the units. But unfortunately I cannot do that. (my middle daughter will me making her first communion) I told him to call me the following weekend and for a beer or two, will help him with the design.
Needless to say, I did not purchase any.
Andy.
