Sausage stuffed Pork Loin

    1 pound of country sausage(Jimmy Deans Maple)
    1/2 onion diced
    4 oz of mushroom (canned)
    1 spoon minced garlic
    mozzarella, parmesan and Romano cheese
    cotton twine

    Rub
    1/2 cup Brown Sugar
    1/8 cup salt
    1 Tablespoon paprika
    1 teaspoon cumin
    1 teaspoon of fresh ground black pepper

    Every 1/2 hour spritz with Apple Juice
    Apple wood chunks
    4 hours
