I smoked my 1st whole packer on Saturday using a Rub from one of the Diners Drive-Ins and Dives stops, which I share with you in the video from the day....

I am now amoured (sp?) with burnt ends.

Nice job David. The video was a nice touch. By the way the towel has to be damp to work. It works for cutting boards too.

Nice job on the video. Looks like it turned out great. One thing I would caution you on is that in the video you menton it coming up to 140 at 5 hours. If you are going to inject it the FDA guidelines call for you to get there in 4 hours so you might need to crank up the heat a bit in the beginning
 
Great video! What camera are you using? I noticed (and appreciated) that your video is in 1080p. This is the first YouTube video I've watched that has had a resolution that high. I finally put my full-HD 24" LED monitors to good use! :yahoo:

Good point and way to pay attention...  This hunk of meat took longer than I have experienced before to get to 140.

I have a Sony Handycam, not a HD version but I am real happy with it.

I wonder why it was available in 1080p. I have never posted to youtube so I'm not sure how that works. In any event, you have inspired me to do another brisket as I never do a full packer.

When I finish building the the video and save the movie file I chose the largest size, I believe that it why it is an option for viewing....  Cooking such a large hunk of meat lets you cook once and eat many times.  Tonight we made Quesadillas for dinner with some of the left over brisket.  (There were no burnt ends left over)
