Your Salami less the pepper flakes LOL

Tropics,

I started out with a Cabela's Jerky Blaster, very similar to the LEM. Problem was, it only holds about a pound and a half at a time, and reloading it was a messy pain. So I took the plunge and bought the 5 lb. stuffer (on sale) like Driedstick, and am very happy with it.

Stuffing these went really fast,I only do 5 lbs so I can stay with this for awhile.

I like that 5# idea. Allows me to make more and tweak my recipe, and 5# of sausage could never be considered work.

The down side is when I make an awesome batch, and go to freezer later to grab some later for a gumbo and I realize I am out........ Its so sad.

I just realized, a shooter! 5 lbs in a shooter is getting close to being work...LOL

SUCCESS!!!! Thank you Joe!! Great taste and texture!! Cut pic would have be better but just a dull knife here at work.

Casings did not shrink, and are peeling right off, Like I said to water was added so no shrinkage

Co-Workers are wanting to put orders in on this one.

I WILL BE DOING THIS ONE AGAIN.

Thanks again Joe.

I'm going to have to get a 5 pound stuffer, I have a 15 pound-er now and for smaller batches a 5 would be easier to clean i think.

You'll be amazed how much easier making snak stix is with a 5#er.

I love mine, it keeps the meat cold, 5 lbs is no work at all allowing more room for experimentation, also there is the table or work surface size requirements. 15 pounds just needs more room to stuff, twist and turn. 'Course were you are from you probably do those fancy multi-twists anyway.
