hi folks,
i was just wondering do yawl apply rub to spare ribs then refrigerate or rub and put right on the smoker and do you slather with mustard or anything else ?

Well it all comes down to personal preference. Some rub then put over night in fridge next day smoke, some rub then straight on the smoker. Some use mustard some dont or use other stuff

Try em both and see what you like there is no wrong way

personnal i rub and wait over night cause i like to be ready for the next day kinda makes it easier for me
 
I don't bother with the mustard. Just rub, wrap and fridge overnight.
 
I use a pretty healthy seasoned rub and if I put it in the fridge overnight it takes over the ribs when I smoke em. I like to rub em down right before I smoke em. I can see where it would be nice to get them ready the night before but just my taste... I like the rub on the outside and not penetrating the meat with flavor. Just the way I like em.
 
Pork and beef I generally don't do overnight - like pig'n-it said it kinda takes over the flavor. But chiken I do like to let sit overnight - I think it has to do with the muscle fiber in the chix being so much denser and tightly packed that it doesn't take in the flavor very fast. Where as pork and beef will soak up flavor within an hour or so. (Those are just guesses

If I have time I put evoo on the ribs and apply the rub the night before. If not, it gets done while the coals are heating. I don't use mustard any more, prefer evoo myself.
 
If Im doing a bunch (15-20 Racks) I do the night before and let sit. But normally I rub about 1 hour or so before I smoke them...I like the mustard as well. It makes a good bark and really does not add any taste.....I always let my butts set overnght with mustard and rub and then a little more rub as I put them on the pit...............Thats Me
 
I prefer to have mine rubbed down at least 2 hours in advance if not overnight. As was said, there is no wrong way. Some rubs might benefit from an overnight fridge stay but I'm willing to bet most of the rubs used by SFM members for ribs will be spicy... in which case an hour or two is fine. I like to rub ribs and wrap in clear, and let set while I go and prepare and light the charcoal. By the time the smoker is ready, the ribs have absorbed some spice and will absorb a lot more in the smoker.
 
I take 'em out of the fridge. Then I clean 'em, rub 'em, and let 'em sit and warm up while the smoker is prepared. They are sitting out for an hour or so.

You could rub them and put 'em back in the fridge if you want. But since rubs usually include salt and sugar, if you let them sit too long the meat begins to cure - which could inhibit the smoking process.
 
I just don't think ribs benefit much from sitting overnight in the fridge with a rub on them. If brown sugar is used which it is in most rubs this just turns to liquid after a couple of hours anyhow and winds up running down the sides of your ribs taking alll the other spices with it.
I mustard first, then generous amounts of rub. Go start the fire and prep whatever else I can.
By the time I have my snp temp where I want it and everything else prepped and a side distraction or two (usually the phone or reading this board) the ribs have sat rubbed for about 2 hours which I think is just fine.
 
It all a persanal perferrance to us here. I like to rub and let it do it's magic in the frig for the night it will pull some moisture from the ribs and let the rub seep into the meat then I pull them and usually add alitlle more rub for the bark and then in the smoker they go. Another thing you mite try is to let the ribs sit out on the counter for about an hour to warm up cause I have heard that a cold rib with tuffin up if you throw it rite into the smoker cold. So theres my 2 pennies.

it is to see how much time you have
if the idea comes spontaneously, rub the ribs and smoke them
and otherwise, rub and in the refrigerator
both are good
