Is it better to ad a wet rub or a dry rub on a smoked spatchcock chicken? When should i mop the chicken when it is smoking? Thanks for all the help
 
It's really a matter of personal preference. I don't rub chicken anymore and I never mop anything. I do sauce chicken at the end of the cook, usually.
