I live in Spanish Fork, UT my wife bought me a Smoke Hollow dual charcoal propane grill with an offset firebox for indirect heat. I have since plugged up all the holes and modified it to make the charcoal side purely an offset smoker its been working nice so far. However, I feel I need to upgrade and would like to make my own build of a vertical offset /w water tray. I haven't dabbled in beef except to cook Tri Tip. I grew up in Southern California and that is what I have been BBQing since I can remember. I love to cook pork its in my blood there's no other way to describe it. I recently smoked a pork shoulder, I achieved the flavor and smoke but just under the tenderness it needed. I am getting better each time use it...
