What do you guys think of taking a rolled pork roast putting a good rub on it, let it sit over night in the fridge then cold smoke it for 4-5 hours with pellet smoker then finish it off in my old trusty Nesco rotisserie oven?

Unless you cure the roast with cure #1. You can't cold smoke it for 4 or 5 hours. Your risking botulism poisoning. Can you put the pellet smoker in your rotisserie oven or is it inside?

Yep...Short of curing it or cold smoking at 36-40°F for 4-5 hours, you will risk food poisoning... Hot smoke at 225+ for up to 4 hours and finish in the rotisserie...JJ

The rotisserie is inside. Im going to finish cooking it like normal. Was just looking for the smokey flavor.
