Rolled Chicken Breasts

  1. I had a couple chicken breasts I needed to use so I decided to make some more smoked rolled chicken breasts.

    I start by pounding the breast flat - this is good stress relief also  [​IMG]

    I add some garlic & a little bit of oregano.

    Then some provolone cheese with some pepper, basil, celery seed & dried orange peel.

    Finally I put some smoked cheddar from my stash of smoked cheese.

    Tie them up...

    & they are ready to go in the smoker.

    MES 30   AMNPS running corn cob & apple pellets

    May I ask for the time and temp? My first chicken breasts were dry, so stuff and roll sounds interesting.....thanks.  [​IMG]

  4. I run the MES at 220 - 225 degrees for these. They usually take roughly around 2 hours - I take them to 165IT

  5. I decided to make some potatoes to go along with the rolled breasts.

    Here they are ready for the grill.

    I fired up some Stubbs & put the potatoes & a piece of chicken breast on.

    I added some crushed red habanero to half the potatoes.

    Done & ready to come out - these smell really good  [​IMG]

    The only thing wrong with this meal is I wasn't invited. Very good looking meal.

  8. Yup it was a tasty meal Case - I saved one breast for tomorrow to eat while I'm waiting on my ribs & stuff to get done  [​IMG]

    You can see how moist & juicy it was in this shot & the corn cob/apple wood combo complimented things nicely  [​IMG]

    Looks great. I like doing this but wrap in bacon.
  15. Thanks man - I usually put them on a bed of rice with homemade sauce but since I made the potatoes I skipped the rice this time...

    As I said, I usually put these on a bed of rice but since I had the potatoes I didn't do that. I top them with some homemade sauce & they are quite delicious  [​IMG]
