Cooking slow and low all the time it is kind of fun to torch something for a change knowing the outcome will be delicious !!! Thanks for the update on your roast.
 
I agree, it is fun to torch something every now and then. And its funny watching my wife get all nervous about it....lol...I didn't say that.
Here it is about 2.5 hours into it. Im gonna put it in a pan now and cover it with foil.

Heres a good example of a factory thermo temp reading and a temp reading off a thermo I installed myself. The thermo I bought at Home Depot reads about 260.

The factor Brinkman thermo reads 225.
