Roast Beef (Qview)

Smoked a ST Roast saturday night for some Sammie's next week.

I pulled at an IT of 140º, i wanted 135º but it still turned out good.

I let it rest in the fridge overnight before slicing.

I smoked with RO Lump and Cherry.

Rubbed with Season Salt and CBP.

For some reason my pics of the rub and the roast on the smoker didn't turn out well But these

are the pics i have.

Like my ol' Uncle would have said "That is some mighty powerful eatting you have there."

Have you tried eating it right after it rested for a bit (when it is still hot)? Or is it better to wait until the next day? Personally, I don't think I have the will power to wait. ... who am I kidding... I know I don't have the will power.

Looks very good! I went to Monteagle Mountain  and of course had to stop in at the smokehouse restaurant http://www.thesmokehouse.com/  and had their smoked roast beef sandwich with sauted onions and bell peppers and oh man!!!!! thanks for the q-view pics for sure gonna have to smoke a roast soon!

  It's very good when it's hot. If i have a few friends to help eat the whole 3 lbs. I will slice it hot.

Otherwise, it Will loose all it's juice if you just slice a small portion then refrigerate.
 
Dang that looks tasty. I haven't tried beef yet, afraid I'd waste the meat. Been busy perfecting my ribs, and chicken. I may have to try this rather than let the wife put the roast in the crock pot next time.
