Can I use a "Beef Round Sirlion Tip Whole" for Roast Beef for (slicing) ???  MIL picked one up(9.5lbs) on sale and dropped it off and I'm not familiar with this cut.  If this won't work well for roast beef, what else could I use it for or turn it into???

Thanks

Mike

EDIT !

Ah Hell, . I went back and looked up Bearcarver's "Roast Beef" Step by Step and that's what he used. So I'm good to go. It's been a while, but I swear the last time I did one I used a top or bottom round. Maybe that was for jerky? I must be getting senile!

The Bear always comes through!!

I just pulled this one out of the MES 30.  I let it go to 145* as the wife doesn't like stuff too rare.( I have no idea  what's wrong with her???

)  Used oak pellets in my AMAZN.  and just did a simple rub with W. sauce,CBP,Kosher salt, garlic powder, onion powder and coriander.

Here's some pics. I'm gonna put it in the fridge , then tomorrow (WHEN I GET BACK FROM FISHING

) I'll freeze for a bit and slice.

I always liked Sirloin Tip Roast for Rare Roast Beef for Sammies, but Top or Bottom Round should be good too.

If Sirloin Tip was too expensive, I'd give Bottom Round a Try.

Be Back.
