I've got an MES smoker and will be doing 8 racks of baby backs this weekend. To make 'em fit, I'll be cutting each rack in half. I've done the 3-2-1 method before, but only with two racks maximum. Should I be making adjustments to the 3-2-1?

Baby backs are more of a 2-2-1 method. From my experience, cutting them in half doesn't make any difference on the time cooked/smoked. Remember, this method is a guideline to go by and times may/will vary.

The fuller the smoke the longer it takes, but with ribs you probably won't see much difference once it come up to temps again.

I smoked 6 racks of BB ribs using 2-2-1 and didn't see an increase in cooking time despite a full smoker.

As long as you have air circulating around you should be fine.
