I've been smoking for a few years on a Smoke Hollow offset from Sam's Club. I decided it was time to upgrade, so I decided to start a backwoods style build. I'm an avid DIY'er, but completely new to welding and metal fabrication. I'm following plans I found on these forums. I think everything is going well so far. I have the frame welded together and am getting ready to install the inner shell and middle wall. I'm concerned about surface rust building up on the sheet metal as I'm building. It won't be a big deal to scrub it out in the cook chamber and fire box once I'm done. My concern is with the smoke channel between the inner and middle walls. Once I seal it, it will be impossible to get in that space and remove any suface rust that may form and to coat the channel with oil to season. I thought about painting just the channel with a high heat paint, but really don't want to chance toxic paint fumes flavoring my food. I'm thinking about cleaning the surfaces now and coating them with a cooking oil before I seal it so the they are somewhat protected while I finish, then I can do a dry run to season and burn off any additional residue once the project is complete. Do you think that would work? Any other suggestions? I would appreciate any advice. Thank you!
