restaurant smoker?

    I'm looking for a smoker for my bar and grill I'm opening. Can anyone give me advice on where I should get it. Will want a trailer for catering gigs
     
  2. Hello.  Your profile doesn't say where you are.  Many good custom builders in the Houston Tx. area.  If you are not near there you will have to try to find custom builders in your area.  Keep Smokin!

    Following hurricane Irene, my restaurant located in killington Vermont was totally destroyed. At that time I was using a homemade smoked built from a 250 gallon oil tank. It worked fine...following the flood I purchased a Southern Pride unit. Love it.....gives me so much more control......they do make portable ones that may meet your needs.

    MMR BBQ do you have an indoor or a trailer? I've been told I should get both but funds aren't there

    My smoker is the largest one they make. Has a overhead hood and the works. I am a BBQ restaurant , go to their website for details on a portable unit. I can give you some leads on sales people. I know they make one that could be transported on a trailer.

    Mine is propane...... I have it located inside a smokehouse building.

    So this is my thinking as far as a RF smoker on a trailer to be used both at the restaurant and catering... I would build a screened in "smokehouse" for the rig to sit in... make a screened "garage door" so you can back the rig in and out..... have an exhaust hood right above the smoker stack so the smoke will vent out the building... now your "smokehouse" will be virtually bug free ... build it right off the back of the main building with a door going from one to the other for easy access ... of course all your stainless prep stations and sinks as well ... just a thought I had ...

    Thanks that is pretty good idea. I'd like to have a mobile and stationary one but budget won't allow that now. Anyone have thoughts if I should go with trailer instead of stationary or vise versa?
     
  11. Lookinh at yhe southern pride website it mentioned all of their gas models can be trailer mounted, so as long as your local health inspectors dont have an issue with the mobile unit at the restaurant I dont see why you wouldn't go that route
