1. At what temp should you smoke them?

2. What temp should you bring them up to?

3. Can you use a meat probe and where is the best place to use it for accurate readings?

4. Should you rest the meat like others before eating?

5. Pork Lion = baby back correct?

Thank you very much! Its time for round 3 using my smoker, Im still searching for a good sauce recipe currently! I will post pictures to show how it went monday!

3-2-1 is for regular spareribs
2-2-1 is for Baby back ribs

As for temp 225* is what I try to get a little over or a little under will not hurt. These times are approximate and if you use them it will come out fine most of us shorten the times a bit once we have experience doing them
 
I personally like the 2-2-1 method for spares, the 3 in the 3-2-1 is just too done. Remember when you foil for the middle 2hrs. spritz before sealing to hold in moisture.
