I have been using the snack stick seasoning kits from LEM and HIMountain. I want to order some AC Leggs seasoning and give it a go. My questions is I am not sure about the AC Legg cure listed on columbiaspice.com. Its 4oz which will do 100lbs of meat. I am looking something less potent. I've only been doing 2-3lbs at a time. Can I use InstaCurte #1 instead? Thanks!

The A.C. Legg Cure is 6.25% Nitrite, meaning it is Cure #1. Use a 1/4 teaspoon per pound of meat.
 
You can certainly use Instacure 1 for snack sticks but you need to follow a recipe that use Instacure1.  Dont make substitutions in these recipes..   It will throw off the amount of salt and maybe the amount of cure you need.   Take a look in the sausage section for a good snack stick recipe or I am sure someone will  come along with one shortly
 
That's probably the best bet.  Just follow their directions and once you get familiar with what you are doing you can try something new.
