quick question re: spare ribs - plz help

hey -

got two slabs of spare ribs that i plan to do with weekend in the same manner i've been doing them. will document as usual for those interested and will also provide q-view.

my question is: is it better to do the slab all together and fit it in the ECB by rolling/skewering, or will it work to cut the rib as needed into "poritons?" this will allow for easier fitting, but i am not sure what it will do to smoking times and/or the final product.

advice would be helpful - it might not really matter much, but could be a good discussion anyway.
 
I usually cut them in half to fit into my GOSM and do them about 3-2-1 but kinda watch when doing the 3 and when they pull back decent I go ahead and wrap then I do about 1 1/2 in foil then as needed for the final step that is for spares and not baby backs
 
My only thought would be you might have to watch them a little closer. Seems to me that the ends are typically a little more well done than the middle so if you cut them you got more ends and less middle.....
