Baby backs were on sale at Meijer. Bought two of them, pulled the membrane off the backside, used Jeffs Naked Rib Rub and my Saturday afternoon is away... Northern Michigan has 25mph winds right now so I will be out tending until the two hour mark when I wrap. Doing the 2-2-1 method.

    Rub is on:

Looks like someone is going to have good eats' this weekend!!!! Those ribs looked so pretty all rubbed down, it's got to be smellin' good!

I echo your thoughts on Jeff's rub, just recently put some on some boston butt's I've got in the smoker, now! The aroma should be bottled sold as the next Yankee Candle scent! [IMG]

  3. How are you doing with that wind? We have some high winds also here in Wisconsin...have been holding off...but im really wanting to smoke something..[IMG]

Those baby backs are looking mighty fine. Yep, those besky 25-30 MPH winds will raise heck with your smoker temp. I did some about two weeks ago under the same conditions. I finally had to prop some wind breaks around the bottom of the smoker and it really helped to hold the temp better.

Don't forget to show us the finished product.

Gethenet try to use something as a windbreak a piece of plywood or tin or even move your smoker to a different side of the house if you have to.

    Good luck

Turned out great for a very windy Michigan day!! Could have gone a touch under on the final hour, but very happy with the results. Have to say this is my favorite rub, favorite type of rib and definatly favorite way to cook ribs!!!!
