Quick questions - what are you using for a "winter coat" for the mini - is that a water heater blanket? Also wondering if you use a different diffuser in the cold, other than the steamer pot insert? My winter technique for the mini definitely needs some help!

No using the steamer diffuser.   I made a simple sleeve for the mini with reflectix, a 2' roll they sell at Lowes, Menards, or HD...just connected it with foil tape and made a flap door so i can see my therm. 

It behaves just like summer time with it. 


 
Looking good. I've been climbing the walls wanting to get the smoker out and although it won't be a problem getting to temp its just too darn cold for me, nothing to block the wind. Soon....
