Hello all. . .well I bought the Traeger Professional on Friday. Did some NY Strips later that night after breaking it in. Tasty, but gotta get used to the way it cooks Steak.

So Tommy (my son) got back from a week at camp (1st time) and he wanted to try a brisket. So last night around 10:00 we picked one up and got it all "Happy" overnight.

So at 9:00a I got the boy out of bed and put him to work:

So around 3:00p we hit 165 and time to wrap her up.

Around 4:00p we had another visitor:

6:30p and time to eat! Tommy is doing his dad pround by using my dads, "Grandpa Gene's" BBQ Tongs. Over 30 yrs old those things are!

Overall, it was very tasty. Next time I'll use a rub that is more salty. It was very juicy in the middle and everyone really enjoyed it and it was a great first smoke on the new Traeger!

Nice looking kids you got there too! Bet they enjoyed the brisket. Wait till they try a pulled pork - my little niece sucks that up like a slurpie! Won't ea the bread but she can suck down that meat!
 
Looks like a nice brisket, and those kids smiles tell it all :)
 
i was thinking the same thing about the deer .. i would have been smoking a deer ham next... good looking family .. and good looking brisket.

I managed a couple of times, but can't seem to stumble onto where I can post something. I also want to try a brisket this weekend. I seen a corned beef brisket at the market is that what I'm looking for? I also seen a full brisket I guess it was pretty big. Help, I may bring a new definition to newbie. HELP

I just knew your visitor was gonna end up in this qview.  I guess not in front of the kids.  Well, maybe next time.  It is great when we can watch our children interact with hand me downs from previous generations, ain't it??  Great looking Brisk.  Good job on that new toy.

 
what size is that traeger?

A corned beef brisket has already been seasoned and brined to roast and make "Corned Beef"  The full brisket is the raw beef that has not been brined/cured. or seasoned.  This is what you want if you want to make your own smoked brisket, with your own seasonings/rubs/injections, etc...  You can usually find briskets around the 5-6 pound range.  You must have been looking at a packer brisket which is the big dog.  Check the brisket section for recipies/tips/etc...
