I think my new favorite (at least for the time being) thing to make with leftovers is BBQ pizza. I've made it a few times with shredded chuckie and loved it. So last night I pulled a couple of bags of pulled pork out of the freezer to make sammies tonight. After the long day I've had I just wasn't in the mood for pork sandwiches. So I decided I'd make a pizza. Here goes...some ingredients

laid out some dough. Only covered part of the pan to keep the crust a wee bit thicker then covered with a mix of Gates BBQ sauc and Ragu pizza sauce

a good layer of grated parmasean cheese.

threw down some pulled pork

some mozzerella and a little bit of cheddar

450* for 10 minutes

kind of boring I know. But this is a tasty thing to do with leftovers when you're just not in the mood for a sandwich.

I think so. I think it's boring without it, but straight BBQ sauce is too much. So I've found the 50/50 mix works great for me.

I do something similar with my leftover beer can chicken.
Leftovers can be a blast.

As much as I hate to admit it, Pizza Hut used to have the most awesome BBQ pork pizza back in the day. I would eat a whole medium by myself in my teenage days, that stuff was awesome. Now we're stuck with crappy BBQ chicken pizza, which often turn out to be pizza with canned chunk chicken drizzled with Open Pit BBQ sauce across it.

I need to dust off our pizza stone and make a pie, I just picked up some butt tonight from a new Mexican grocer in Pontiac, MI. where the regular price is $1.19/lb. Also picked up a Grobbels CBB for $1.99/lb for some strami when I return from Chicago next weekend.

Well that looks great I was planning on doing this with all my left over pork so that is fantastic!

Good call on the 50/50 of sauce and BBQ. While I do enjoy BBQ I think straight is to much and had never really thought of mixing them.
 
Great idea on mixing the pizza and bbq sauce, Dude. I feel the same way, straight bbq sauce would be way too much. I wanted to try what you did for some time but never went though becuase of the sauce. Looks like you might have solved my dilema.

I also use the 50/50 mix on the sauce. Here is another great example of non-traditional pizza. I learned this when I was a shift manager at Happy Joe's WAY WAY back in the day!

We made some of the best taco pizza ever, and the sauce was a mixture of traditional pizza sauce, along with refried beans! The mix is about 60/40 - reg. sauce/beans

So if you want a south of the border flavor to your pizza - try that combo for a sauce - good stuff!

I agree scarbelly that pizza is a favorite comfort food of mine. It was a little more work than just warming up the PP for sammies. But I needed it. Still have a couple of slices leftover for lunch today.

Ok, so maybe pizza isn't boring, I just thought that posting leftovers with such a simple thread wouldn't get this many comments. So I'm really happy that everyone is enjoying this thread. Give it a shot. It's great with shredded chuckie and chicken too.

The crust was just a bag of that Betty Crocker "just add water" stuff. It was already getting late and I just wanted to eat. The 50/50 blend of pizza and bbq sauce is the key for me. I'm not a big fan of either if they're alone. But combined, it works for me.

And heck yes, Happy Joes Taco Pizza is (or at least was the last time I had it) the best pizza in the world. The warm pizza, topped with cold lettuce and tomato, then covered with crushed taco flavored Dorito style corn chips. Even better slathered with those little packets of taco sauce. There wasn't a kid I knew growing up that didn't want to live on that stuff.
 
lol... did that last weekend except I added carmelized onions to mine. Another great cheat if you are in a hurry or decide to do this last minute is swing by your local take-and-bake pizza place (Papa Murphy's). Most of them sell dough all made up for just a few bucks.
