Pulled Pork for my dad's 76th birthday party (updated with fire damage and yard work pictures) added

    My dad will turn 76 on sunday April 22 so we are having a "work day party"


    We will all get together at his place and do yard work , cut wood and fill his wood shed for next year.


    and any thing else he needs done. So I'm making PP,  Dutch wicked bake beans, then tomorrow making pork shots.



    got two butts from Walmart.

    I like smoking them in a pan that way it catches all the juice and it make clean up in the smoker easy.

    here im starting with 12 briquets in the chimney starter

    Loaded my basket with 16LBS of briquets and some hickory. will find out how long that will last in my UDS.


    This is the first long smoke in it and the first time using briquets in it. I used some lump before and it lasted forever.

    started with some white smoke then it settle down to some good TBS

    Got the butts on at 7AM. so will update when they come off.

    Thanks , just mix up "Dutch's Wicked Baked Beans" will go in the smoker with the chicken i'm doing for dinner.

    will post pic. when I get them on the computer.

    Thanks, we always have a great time on these "work days" getting everyone together.

    we have 4 young strong boys ( early 20's) to do all the hard work.
    Thanks, it is great way to spend the day. and I will wish him "Happy Birthday" from you.

    Do you guys find any difference in taste from the FOIL PANS??

    Do you reuse them? Pretty cheap to buy I guesss

    I could get the bear claws out and have it serve up in the same pan lol

    Yeah it sure would make clean up easier hahahah

  10.  Our local Sam's club has 1/2 size steam-table pans (pretty large pan) @ about $6.50 for 40 pans. That makes them pretty cheap, but I still reuse them in that I like

    to double pan them for extra leak protection. The outermost pan gets smokey, the innermost pan gets reused as the outer pan next time with a new pan for the food.

     There are several ways to defat pan-drippings. They make a separator that's like a pitcher with the spout coming off at the bottom. When the fat stratifies you can pour off the juices and leave the fat. If I have the time I usually pour the juices into a pitcher I use just for this, Set it in the fridge and peel off the fat when it solidifies. If you don't have that much time, Any container for it to settle in then skim the grease off the top. When it gets nearly gone you can lay a piece of paper towel on the surface and quickly remove it along with what fat it absorbed.

    Do you just pour the juicy juice back over the pork and mixx it back in?> Anyone add anything to it??

    It was late sunday night by time we got home. So I didn't have time to put the pictures on yet.
    The PP turn out great. Took 17 1/2 hours to get done. End up putting it in the oven at 11pm.
    set my Mavrick to go off when the butt reach 205 and went to bed. We had to get up at five.
    Its a 2 hour drive to my dads and we had a lot of yard work to do up there.
    Got home around 10 Sunday night and my sister calls me . My dad just called her and told her his house
    Is on FIRE !!!!!. his house is out of town on some back roads. Someone was driving by seen the fire.
    Got my dad out the house and he was able to get the fire out. Before we did all the yard work that day
    You could not see the house from the road. We cut all the trees and brush down in front of the house that day.
    the fire was just starting when the guy drove by and seen it. If the trees was still there i dont think he would have seen it.
    Bird nest is what started it. It was by the porch light.
    I will add pictures tonight after work .
     
  14. Glad it turned out nicely for the day, but the fire at your dad's house, not good. Happy to hear someone saw it and got him out safely and I hope there wasn't much damage.

    Thanks, its always a good time when we all get together. Got a lot work done that day.
    His wood shed is full again. As far as the fire we will just have to replace some siding
    wire and some plywood. We was just lucky that guy drove by when he did and was able
    To get it out quickly. The fire department came out and made sure the fire was all out .
    Got a feeling the guy that stop and the fire department will be getting some good BBQ off my
    Smoker real soon :grilling_smilie:

    I don't eat beans so wife wanted the stuff chop up nice and fine. here some green peppers

    the Butts was on the UDS . put the beans and some chicken on my other smoker

    Beans all done . smoke for about 3 hours. everyone loved them.

    Now that's some good looking chow! Very nice work! I've been wanting to make Dutch's beans for awhile now and since I have 15lbs of belly curing, it shouldn't be long before I make them beans.

    my dad out of the house and put the fire out before it spread

    this is the front of the house were the fire started ( the light by front door)

    we cut down all the brush that you see on the left. It cover the whole front of the house and you could not see

    the house from the road.

    my dad had open heart surgery few months ago and had a valve replace.

    nurse said the used a horse valve. he was grumpy when he came out of surgery

    so i said it must have been a Jackass valve. [​IMG]

    he though it was funny, kick me out of the will but said it was funny [​IMG]
