what kinda wood can you use for putting the probe into

You can use any kind that you can smoke with. Once the wood dries out and splits or gets dirty, you just throw it on the fire.

what great info. why didn't i think of that, just getting into smoking, getting my wsm today for sure.
 
Just a note: Don't use anything like a 2X4 or plywood. 2X4s are usually made out of pine, and plywood, landscape timbers etc... are full of chemicals. Stick with the stuff you are smoking with
 
I just use a nice square chunk out of the bag, and drill a hole through it. I have found after a couple of smokes, probably due to the drying process, the hole enlarges and the probe easily slides. I don't want to risk it slipping out and touching the grates so when it happens, that's when it becomes future smoke and I find another to take it's place.
 
That is correct I often push the probe through a potato and set that on the grate and it works fine
 
thanks i new i heard that right,one thing if your cooking for a long time say like 10-12 hrs won't the potatoe fall apart

No the potato will do ok for that long as long as you don't mess with it. I had one in last weekend for 8-10 hours. I sure wouldn't have eaten it after that but it held the probe just fine

What's so bad if it touches the grate anyway? It seems to me everything should be at about the same temp so it wouldn't matter much other than slowing the response time. Say you normally cook at 225 F, the grates would soon be at 225 as well.

Why not just bend up a metal clip that attaches to the grate, grill or even a little stand that straddles the grill. What ever, but something that would tend to last rather than something that will be consumed. There must be a hundred ways to bend something up out of coat hanger wire or even a piece of metal cut from say a tin can.

Here's one just to start. Take a small can say like one of those small little V8 or tomato juice cans.
Drill or punch holes all the way though both sides of the can large enough for the probe to pass though. You could even use a nail to punch some holes if you don't have a drill. (You should own a drill so ask Santa to bring you a drill next Christmas)
Set the can on the grill, but a few pebbles in the bottom to weight it down, shove the probe though the holes in the can so the end is out in the clear and free from contacting anything but air.
The can should last pretty much indefinitely and you can set it where ever you want on your grill.
