PRIME Beef short ribs, with Simply Marvelous Cherry rub...
 

Cooked them on the Egg at 230 for about 6.5 - 7 hours - was cold and rainy all day today. The Egg held temp like a champ.



No big honking pockets of fat on these, just lovely marbeling...

Looks great.

Short ribs going tonite for tomorrow's meal.  No smoke, these will be braised and rest overnight.

Ellymae, I am a sucker for short ribs.  Those look fantastic!

Where did you find prime?  Do you think it is worth the extra money?  The choice I get at Restaurant Depot are very well marbled.

Got these at my local butcher (The Country Butcher in Kennett Square PA) - if you are in SE PA it is worth stopping in. He only sells local Prime grade beef and I like supporting small businesses when I can.

We were in there picking up a one bone ribeye and got these while we were there. I am all about one stop shopping.

Were they worth it... I wouldn't buy them all the time, but as a treat they were nice. I didn't have to do any trimming, the ones I get from BJ's Wholesale I usually have to trim a fair amount. I ate that whole plate last night, when I can typically only eat 2 so that tells me there wasn't as much fat in the ribs themselves.
 
If you have a good local butcher, support him!  They are hard to find and I hate it when one goes out of business.

I agree - and I love going there, it's just that it's a high end shop so very spendy....
 
I just saw a nice meaty 15 pound rack of prime beef ribs. they were big! $15 / lb though so I had to pass.

Your ribs look delicious.
