Well, I thought I planned ahead enough but the dreaded 4 hour plateau killed me. It's 2 hours until dinner and my 9lbs shoulder is at 181'. Let's say it hits 190' at 7pm (dinner at 8pm), should I pull it, foil it, and put it in the cooler for an hour or keep it in the smoker until it gets to 195-205' where I won't be able to let it sit for longer than a few minutes before pulling? I want to make sure it really falls apart. Thanks!
