My family and I love smoked pork steaks in my MES. I buy them in 1 inch cuts. I normally smoke them at 225 with 2-2-30mins. My problem is that they turn out a little greasier than I prefer. Any tips what would cause that? Is it just the cut of meat? Do I need to let the meat rest longer? Thanks in advance.
 
Do a reverse sear on them! Smoke for the flavor crisp them up to render out more fat.:drool
 
I like pork steaks, I just grab a bone-in butt and have the butcher cut it to the thickness I want, I have smoked em, grilled em, even put the steaks in the pan with dutches (or any) baked beans and cook them in the smoker, that is actually one of my favorite way, Bonz
 
If I put them on the grill or reverse sear them, should I still do the 2-2-30min. Or should I not smoke as long?
 
Did some last week, smoked low and slow for a while then finished them up on a hot grill

I would only smoke them until there basically done and finish with the heat! Time would depend on how thick the meat is get some good therms for smoking they will be worth it over cheap junk!
