Pork Loin Question

    Didn't get my 9# loin in last night! It's cut into halves already, can I cut it into 4 chunks n have it ready for the game? [​IMG]

    Sure you can. No problem.

    If you can wrap them in bacon, it will help keep them from drying out. Otherwise spritz them with some apple cider vinegar from time to time. Pull them at 150º internal and let them rest a bit. [​IMG]
