pork loin , how long & what temp ? started them at 240 2 hrs ago, should i wrap it now ?

    no need to wrap.. loins cook fast.. go to an internal temp (with a trusted thermometer) of 150`. .. should be getting close by now

    I'd go to 140 and let the carryover cooking take it to 145 while it's resting.
