Pork Injection

  1. Hey folks, I am doing a cook next weekend for about 100 people and I am going to be cookin Pork Butts. What is a good injection recipe to give the pork some extra flavor. I've never injected any of the things that I have cooked and thought I would give it a try. Thanks for the help in advance.[​IMG]

    heres one I use:

    1 qt apple juice
    3/4 cup o.j.
    1/4 cup cider vinegar
    1/4 cup hot sauce
    1/4 cup brown sugar

    Just out of curiosity, why try something new on a big cook? If you don't normally inject, I wouldn't start right before feeding 100 people.

    Just a thought.......good luck in any case.

    If you are loking for more flavor try gettting there with a good finishing sauce.

    Well, what can I add to the previous comments?

    I like the sound of Jim's injection but also agree with Joe that if you aren't completely sure maybe you won't want to experiment with a huge crowd?
    Also Dale makes a good point, a great finishing sauce can turn a great smoke into something so good and so amazingly delicious-damn I want a PP sandwich now...

    One thing I have been doing recently with many meats is injecting with honey, a little water to make it flow better and a touch of whatever seasonings, the honey gives the meat a wonderful underlying sweet yet natural flavor.

    Also check out Big Bob gibsons injection-Chris Lilly...

    It has apple juice and some sugar etc...It is basiacaly a brine injection that the longer-4 hours plus-in the meat the better.....

    Lillys inject is good, I'm gonna try Jim's , It lookks good also.
    I like just plain pineapple juice with a little worchy sauce also.

    Thanks guys, I inject mine no more than 12 hours before, usually the night before, then apply my rub, and the wrap in plastic. the next morning I re-apply the rub before tossing the butt on the smoker.
  10. Thanks for all the info. The reason for the injection is because I have a pretty good rub that I put on it and I just wanted to add a little different zing. Jim's sounds pretty good. But the dipping sauce sounded good also. What kind of dipping sauces can yall reccommend. I appreciate all the help.[​IMG]
