So due to unusual circumstances I had to go pick up an ECB this morning to do my pulled pork (first boston butt), now this thing has been a pain in my rear. I started around 11 and its currently 5 here and it's been at the plateau phase for a while and this awful contraption refuses to hold a constant temprature. So what do I do...its getting late and i need to drive back to school........one more thing. DO I really need to let it rest 7 hours in a cooler before pulling?
 
U can double foil it and finish at higher temps in the over... 7 hours??? no, 1 hour will do just fine........good luck..
PS.. my first butt took over 14 hours...You are only at 6, not bad.
 
Not sure what to suggest except for your last question about letting it rest. I have let my butts rest anywhere from 3-1/2 hours to 6 hours. I have never gone 7 hours. I would imagine at least 1-2 hours is necessary, but not really sure.
 
do you have a oven you can finish it up in
get the temp up to around 200 let it rest a hr or so it will
be ok
foil it good
 
Thanks for the quick replies folks.....IT should have been 2 hours deeper into the process but my flowerpot smoker (rigged for charcoal and pid controlled) due to mishandling underwent thermal shock.....so what higher temp for the oven do you recommend?
 
To finish in the oven foil it, add some liquid and get it up to 350* it wont hurt it. Be sure to let it rest after for at least 30 minutes. Let us know.

ADDED: Get the oven to 350* and the meat to 200* then let it rest.
 
It worked....it didn't quite fall apart but it did work. Thanks folks.
