Hi all

Getting ready to throw a 8.5 pound pork butt on my electric smoker.  Have it rubbed down with Carolina style "rub some butt" rub.

Thinking that I will put in on before bed, wake up around 6, wrap it and pull it by noon.  Company coming at 3.

I am worried because last week I did a 4.5 pounder and it came out terrible, but I think it was a bad piece of meat.  At IT 200 it still would not pull and inside was nothing but fat.

Hoping for the best
 
I used pecan and apple chunks for smoke.  

I ended up putting on a 9PM then foiled at 3AM.  Was ready by about 10 AM.  I was out getting stuff done and came back the IT at 202, so it was a bit too high.  

Pork was very tender, but a bit dry.  Needed to take it off maybe at around 195.  

I left it in a cooler wrapped for a few hours.  Then pulled it.  Served it re-heated in a slow cooker.  

Was ok, but not my best.
