Got a good deal on the spare ribs and had some babybacks in the freezer. Going to make 3 spare and 2 baby's and about a 8#butt bone in. Stared the charcoal at 5am and the butt went in at 6am. Goin for a serving time of 5 or 6pm. Injected the butt and dryrubed the ribs and left in fridge overnight. I will use tonys for dryrub and will go spicy on one slab with stubs wicked wing sauce. I have used it before by mistake and they were awsome hot but awsome. the rest i will use stubs mesquite bbq sauce and will use stubs mopping sauce to baste.Great saturday to be smokin.

The ribs in at 1pm. butt is at 189 almost there.
 
The rain is coming down hard. Smokers never die rain sleet or hale. We shall see if the Longhorn Deluxe can handle it.
 
Looks great hope the rain is a short shower and you can continue your fantastic looking smoke with clear sunny skies!!

Had a little trouble keeping fire going but all undercontrol. seems like the rain has stopped. Just another day in Katy. Traffic does slowdown when they pass through.
 
Bigsal, I'm sure the longhorn can handle it but how are you feeling?? Not too far from the 12 hour mark!!
 
Started to pickup butt and fell apart. And yes i had a taste before i let it rest. It is ready to pull and it taste unreal. Scratch and stiff picture guys.
