Pork Butt and Beef Brisket at once

    Tomorrow I'm smoking a pork butt (8 lbs) and beef Brisket (10 lbs) and plan to do them at the same time.

    Any thoughts on this? It is being done on a Weber 22" smokey mountain and I plan to do it side by side.

    Should I fill the water pan? Other suggestions?

    I'm looking forward to the meat sweats. Group of us are also brewing beer.
