Well , I finally got the O.K. to go out and play , so I did some Ribs. Beef and Pork , plus a little Beef Roast for Trish. Just starting and the smoke is all heavy and whitish . . . the temp. is just starting to climb. you can see where I have the clouds of smoke and the next Sticks pre-heating . . . Here's the Bounty...2-Beef ribs (rather skimpy on the meat . . . mostly bone . Well , here it is on the Q-mats ready for their sauna. So , here's where I close the lid until I deem the load is ready for a check. So , at 6 hrs. in 225*F and the check showed all ready to go home with me... isn't a good shot , but you can see the smoke ring and juiciness . All in all I think it was a good go. I'll see tomorrow when the F-I-L gives me the lowdown. a shot of the pull back on the bones and the sweet sweat all over those Babies . . . shot when I opened the lid . . . and the type of smoke I kept on them the entire smoke.
