iowa smoking

I probably know just enough about this to be a health-hazard! My name's Rob- live here in Des Moines, Iowa, and have been using my offset heat source smoker (I can't even remember the brand right now!) for about a year.

I've had some pretty good results with it lately but know I can do better. Many of the books I've read talk more about preparing the meats than the smoke source itself, so I'm weakest there. Anything beyond the 180-225 degree heat until the meat's falling-apart tender is new ground for me. I may catch a good smoky flavor sometime, others it comes out like its spent 4 hours in the oven!

Hopefully that serves as an intor- this looks like a terrific site. I'm looking forward to improving life around dinner-time!

This site is awesome.
I got my smoker bout a month ago.. and already produced some fine smoky flavored mouthwatering meat.

I've smoked a grand total of three times so far, and each time just gets better and better. Can't wait till tomorrow.. smoking up some whole chickens.

Pay attention to the old timers in here, they know what they are doing and they love to help us newbies out.

Hey Rob and welcome to the smf from another iowa smoker. There is quite a few of us on here.

I think i was the same as you. Had my smoker for a while, turned out some good stuff, some ok. Could never get that falling apart, melt in your mouth result.
After finding this site, doing the mods to my chargriller and reading the various posts on here i smoked a boston butt that was the best thing ever to come out of the smoker. It just fell apart.
Also i was introduced to the fatty ........ them things are a must. Put one in when you start your smoke. Around 3 hours later there's a good snack ready while the main smoke goes on.

Anyway, have a good look around the site. There is a wealth of info here.
 
Rob, as its been pointed out, there is a wealth of knowledge here. To tap into it, all you have to do is ask the questions.

Remember to keep the smoke thin and blue.

I'm over in Urbandale- watch for the fire department's new pumper the next time I fire the smoker up! You here in Des Moines too then?

Think I'll pull it out the smoker out this weekend or next. Home Depot has some 20lb bags of hickory and mesquite chunks that I picked up- we'll see what kind of damage I can do with those!

If you are shy, you can always do some search's(up at the top of the page),Your question may have been asked before, alot of them have, but theres enough good folks here to keep answering them. You just ask questions about whatever you need to know, plenty of folks here willin to help and lots of knowledge with many different units.
 
welcome to smf, like capt dan said there already a ton of info collected here already you just have to look for it. ask questions and someone always around to give thoughts,advice u lookin for. share some smokes!!!
