Picnic cut question

    Hi all,

    I am cooking up a picnic cut tomorrow, 8lbs but I may cut about 2lbs off because i do not want to start at 3am. I know that the picnic cut has a tough fat cap. Should I cut this off or leave it on? Thanks.

    Funk,I cut the skin off of mine,but leave as much fat on as possible,just my .02 worth [​IMG]

    is it hide or fat? Hide is grainy, tough, 1/4 inch thick. Fat is white, loose, easy to cut with a good sharp blade.

  5. Leave the fat on, cut the skin off. My opinion.
