Pepperoni Sticks

    Had a busy fathers day, lots a work ta do an a big smoke.  One a them bein a new batch a pepperoni sticks. 


    The pepperoni stuffed inta 19mm casins before smokin.

    An after a nice ride in the smoker.  These wen't real fast, guess be makin nother batch this weekend!

    Man oh Man those are some fine looking pepperoni you have there Tip. I would really like to have that recipe if you don't mind ........Please.

    Curious---What kind of casing is that? Can you remove it easily? Does the smoke go through it good?

    Might sound like dumb questions, but I think I'm getting a stuffer soon.

    Bear, there a Mahogany Collagen casin, bout 18-19mm.  They are edible, but can be peeled off if ya don't like em.  The smoke won't penetrate alot, but it does get in there some.  Pepperoni ain't usually smoked, but I don't make the usual stuff most a the time!

    Yall enjoy that stuffer, make some might fine stuff ya won't find in the store an ya never go back ta eatin that store bought stuff!

    Did your casings stick to the meat or did they pull away. I have no luck with the colagen casings they pull away and they get tough and i can't figure out what I am doing wrong the maet inside is always good but the casings aren't.

    I use edible casin so it ain't a problem.  Future DIL didn't like the casin an pulled it off without to much trouble I guess.  Personally I like the snap that them casin give an perty easy ta stuff.

    What temp smoker at?  Internal temp when done?  They sure look long did smokin take?    Thanks
