pastrami cupcakes

    I thought I'd post this for those of you that have leftover pastrami.  I didn't think to take pictures as I was mixing this up.  

    Pastrami cupcakes:

    2 C chopped pastrami

    1 cup saurkraut

    2 oz cream cheese

    4 oz thousand island dressing

    swiss or gruyere cheese

    rye bread

    butter

    This will make 12 regular muffin tins of cupcakes or 6 jumbo muffin cupcakes.

    butter one side of rye (I trim the crust) .  Push into muffin tin to form a cup, butter side down.  In a saucepan, heat up pastrami, saurkraut, cream cheese and thousand island dressing till well mixed.  Spoon mixture on top of rye bread.  top with cheese.  Bake at 400 degrees for 10-15 minutes.  Rye will be crispy like toast.  Enjoy!
