Decided to try something new this year. I butterflied a Pork Loin Roast. I made a spread of Pine Nuts, Garlic, Rosemary, Parsley, Parmigiano-Reggiano, Olive Oil, Salt, and Pepper. I blended it in the food processor then spread on the Roast. Then rolled it in some Pancetta. I placed in the smoker with Black Cherry and Apple wood. I will be finishing it in the oven at a high heat to crisp up the Pancetta. Thanks for looking! I will have more photo's once it is done. Smoke ON!
