ordering a whole beef

    so not a whole beef but I am splitting one with some relatives and getting a 1/4

    any suggestions on roast sizes, cuts, etc when I do my cut sheet???

    Most folks forget the tail, tongue, liver, heart, cheeks, hanging tenders, marrow bones.... all the good stuff.....  AND you do not want those things to count toward your portion...  You will pay separate for those items for cutting and wrapping.....

    I leave the roasts to the butcher, but I like my steaks 1"+. i ask for a coarse bring on the burger, just what we prefer.
