First off,
What's up to everyone!

Ok, I just registered here today as soon as I stumbled across this forum. I have enjoyed smoking some pulled pork on my Weber 22.5 but the time has come for something more exciting to smoke on now. I've had my eyes and thoughts on the Weber WSM and the CharGriller 830 w/ side fire box. I need help on deciding what one to get. I don't smoke large amounts and I know that there are mods that can be done to both of them and I'm cool with that. I like to fool with and modify things. Any help with this decision is well welcomed.

Leo, welcome to SMF. Glad to have you, someone will be along to help you with the decision on which smoker to buy. Myself, I have a homemade stickburner which I use. Any other questions just ask away, friendly folks here.
 
I don't have either but I started on something similar to the WSM and I am building something similar to the CharGriller 830 w/ side fire box.

Both are great smokers but IMHO the WSM can be a PITA because you have to move stuff around to get to the lower layers to turn, spray or whatever.

The easiest smokers to use IMHO are the verticals.

That being said - down the road you'll probably have 2,3,4 etc smokers and you learn alot from a bullet type smoker.
 
I haven't used a cannister smoker. But I have a chargriller. Don't ask me what model, just accept that it is a chargriller. I like it, but had to make some mods. I work on the cheap, and can't weld, but I can tinker and drill holes... so I did. I like the chargriller because it is versatile enough to change back to a grill for some quick burgers. What I see as a problem so far is that I probably have to burn more charcoal than I would with a cannister, since I lose a lot going out thru the top of the firebox. I am still trying to figure out how to remedy that. I am thinking of finding someone to weld a piece of metal angled inside the top of the firebox to direct the heat, but I haven't completely thought it thru yet.

Either way you go, you should be able to do about anything you want. Knock around the forum for a while, and you'll get those juices flowing...

I'm really leaning towards the CG. You know, that's the one thing about the WSM that I don't care for, no easy access to anything. I'm thinking CG.
 
Welcome aboard! I have the CharGriller w/SFB and love it! It is a very versitile unit.

I have made several mods to it to make it better, as many of us here have done. So, whatever you end up getting, just ask away if you have questions on mods or whatever!
