Well I smoked some eggs for the first time, and oh my god were they good, I am going to use them to make deviled eggs, if there are any left by that time, LOL. But at least if I eat them all, there will still be the 2 racks of ribs that are getting ready to go in the smoke.
 
Smoked eggs are great. Smoked pickled eggs are tasty too.
Yes they sure are.

The appetizers below are smoked, spicy hot, pickled, deviled eggs, topped with a slice of smoked salmon pierced through a black olive. They are then placed on a bed of Korean kimchi separated by a chunk of sardines all surrounding green olives.

why do you take the yoke out ?? I let them get smoke too....
I take the yolk out in order to get max smoke coverage on the whites. If the yolks were left in there would be less surface coverage. You could scoop the yolk out and smoke it also but, while the whites are smoking, I am preparing the yolks.

Me and my friends used to buy these at convenience stores when we lived in Korea. They probably weren't as good as homemade, but they were still pretty good. Especially after a few beers. I remember many late night eating contests to see who could put away the most.
