Well I smoked some eggs for the first time, and oh my god were they good, I am going to use them to make deviled eggs, if there are any left by that time, LOL. But at least if I eat them all, there will still be the 2 racks of ribs that are getting ready to go in the smoke.

Smoked eggs are great. Smoked pickled eggs are tasty too.

    Yes they sure are.

The appetizers below are smoked, spicy hot, pickled, deviled eggs, topped with a slice of smoked salmon pierced through a black olive. They are then placed on a bed of Korean kimchi separated by a chunk of sardines all surrounding green olives.

Do you smoke them whole or halved?

Thanks for asking. I smoke them halved and scooped out in order to get the max coverage possible. Below crackers, eggs, and paprika.

I take the yolk out in order to get max smoke coverage on the whites. If the yolks were left in there would be less surface coverage. You could scoop the yolk out and smoke it also but, while the whites are smoking, I am preparing the yolks.

Looks great!   How long do you smoke the eggs?

  11. Me and my friends used to buy these at convenience stores when we lived in Korea. They probably weren't as good as homemade, but they were still pretty good. Especially after a few beers. I remember many late night eating contests to see who could put away the most.

Thank you, I smoke the eggs to a desired color rather than time.  Using a medium density, white smoke, figure around 45 minutes for the eggs and paprika, 5-10 minutes for the crackers.

  16. I have made smoked eggs a few times. Did them whole and seasoned them with bacon salt. Came out really tasty!

I'm assuming you cold smoked the eggs? Correct?

So you hard boil an egg, half it, remove the yolk, and cold smoke?  Pretty cool.
