So I think i finally figured this out, roll call is where you introduce yourself not all the other places that i already have. My name is Rick from Colorado Springs I live about 10 miles south of the black forest fires and 10 miles east of the waldo canyon fires from last year, and my family and I had a house fire the day after Christmas, which we are still displaced from, for another month or so, if anyone reading was affected by the fires God bless you and yours and I pray for a speedy recovery (God bless firemen and good insurance). Anyway I am a journeyman electrician, ex cook, married 21 years to one good woman, father of two great boys 19 and 16, I like to ski, ride mountain bikes, camp, fish, hang out with the family, and eat good food.  With my cooking and constuction background if i cant hit it with a hammer or make it taste good and eat it, I dont always know what to do with it at first, that should explain the confusion with the forums.  I have a brand new mf two door propane smoker, that i made some nice briskets with on fathers day. So thanks everyone for their suggestions, and the online courses have been helpful. Happy Smoking Rick
