Noodle less smoked ground turkey lasagna!

What do you do when when it's October and you still have tomatoes falling off the vine??? You make whatever you can with them! That's what!

So here we go. I used fresh spinach, fresh maters. You can buy this if you need to. A tub of ricotta, a package of ground turkey. Fresh basil, garlic, onion, parsley, oregano. I did not have the onion, or oregano so I used dry.

Here's the gist of it, get out a casserole dish, butter the sides. Lay a bed of spinach in the bottom, next layer tomato slices fresh chopped basil garlic onion. Ricota cheese and whatever other cheese you want. Meat, the repeats he other layers ending with the top layer of cheese. Shake Parmesan all over. FYI Season each later with salt pepper oregano. Cover put in 350 oven, or if you are brave place that nice casserole dish into the smoker for 30-40 minutes. Uncover place under broiler until cheesy too is bubbly and brown! Rest serve, yumm!

Ummmm yeah....I was thinking some eggs in that or that on some eggs, scrambled up in a tortilla. You know, make a small indentation and drop an egg in there (or 6) and then bake off. Good looking 'maters yet.....long gone here in the Valley and, of course, we are almost under water after 3-4 days of rain already...LOL. Well played, sir......Willie

Thanks Willie! Yeah I looked in the garden yesterday and I didn't see anymore close to ripe maters. There were still a few raspberries though! Your rain showed up here yesterday, you can have it back anytime...

Thanks for the tortilla idea I know whats for breakfast tomorrow! We've done the baked egg dish before, and I gave it a serious thought. But I knew I had to pass this off on my boys as "lasagna" to not get the moans and groans! They didn't even notice that there were no noodles!
