    Hello all-

    I'm a fairly new smoker. I've helped smoke entire pigs (spanferkel) over coals before as a part of the germanfest festival in milwaukee, but never anything on my own.

    I've got a pork hindquarter on its way for this weekend, and can't decide between modifying the large weber grill that I have or digging a pit in the backyard to roast it. So I thought smoking it overnight in the grill may be the way to go. I've got some old applewood from the trees in the yard to use. Any opinions/advice would be much appreciated.

    Welcome to SMF Kurt. Why don't you dig that pit in the backyard & have some fun with that hindquarter. Check the link in my signature for posting qview, as we will want to see that baby once it is done. Go Hog wild with it. Glad to have you here & enjoy your stay.
