No foil baby backs – 1st attempt with Q-View

  1. So I picked up some ribs yesterday and I usually do the 2-2-1 method. I typically foil with a little of the spritz that I use (apple cider vinegar and pepsi), squeeze butter, and brown sugar. 

    I was reading a few posts last night and saw a bunch about foil or no foil. I often have this debate with myself making brisket or pulled pork, but I never really did with ribs…until now. I figured oh well, what’s the worst that can happen…  I’ve had dried out ribs before, tough ribs, and ribs you couldn’t pry off the bone so I figured I’d give it a shot!


    Basic rub with cumin, chili powder, granulated garlic, onion powder, salt, black pepper, cayenne pepper, and paprika (roughly equal parts) and on the smoker at 250*. 


    Here they are 2hrs into the cook after a quick spritz(normal foil time).they’re getting a little dark(the pics looks lighter)[​IMG], having second thoughts about the no foil, but I’ll try and hold out and see what they look like in an hour… [​IMG]  I’ll keep you guys updated!

  2. Update... 3 hours in and they don't look any darker thankfully, so i'll keep going and just keep spritzing [​IMG]
     
  3. 4 hrs in and a few darker spots, but all and all, not bad looking, i shifted the charcoal around a little to see if i can help it out a little... pretty good bend, almost there, will probably check again in about 30 and if they bend right, hit with the sauce for a nice sticky coat! [​IMG]

  5. Ok...I'm sold...give it time and it will come around. Now mind you, I haven't eaten yet, but they look amazing now (hit a little squeeze butter on top, and a dusting of brown sugar for the last 45min and here you go...light coat of sauce going on now and then it's DINNER TIME!!! [​IMG]


    Here's the end result...they turned out pretty good. Couple dry spots , but mosty jucy and tender. Thanks for looking! [​IMG]
