So I picked up some ribs yesterday and I usually do the 2-2-1 method. I typically foil with a little of the spritz that I use (apple cider vinegar and pepsi), squeeze butter, and brown sugar. I was reading a few posts last night and saw a bunch about foil or no foil. I often have this debate with myself making brisket or pulled pork, but I never really did with ribs…until now. I figured oh well, what’s the worst that can happen… I’ve had dried out ribs before, tough ribs, and ribs you couldn’t pry off the bone so I figured I’d give it a shot! Basic rub with cumin, chili powder, granulated garlic, onion powder, salt, black pepper, cayenne pepper, and paprika (roughly equal parts) and on the smoker at 250*. Here they are 2hrs into the cook after a quick spritz(normal foil time).they’re getting a little dark(the pics looks lighter), having second thoughts about the no foil, but I’ll try and hold out and see what they look like in an hour… I’ll keep you guys updated!
