Greetings All! New to the forum and the "world" of smoking. Have always had the love and taste for it, but have only played around a bit on my BBQ. I joined this forum and read and researched for hours. I took the plunge and bought the MES 40 BT and also the AMNPS 5 X 8 tray. I would like to give a big Thanks to Bear and all the others, who have spent HOURS posting the invaluable amount of info for all on this forum. Last weekend I did 2 racks of babybacks. Did a homemade rub the night before, wrapped in saran wrap. Pulled them an hour before smoke so they could get to room temp. Thru them in the smoker and did the 2-2-1 method. I must say they were the BEST ribs I have ever made or tasted! Today I plan to do a pork loin and 2 whole chickens! Will post the results later.
